On ne se laisse pas aller

Si vous pensiez qu’en Papua c’était dépression autour de patates douces bouillies et poisson frit en levant nos verres de thé autour d’un plant de taro décore en arbre de Noël, c’est rate.


Noël en Papua autour de 2 recettes (et de patates sautées, de vin sicilien, de terrine de canard au calva, de saucisson aussi merci et vive les livraisons !)

Reminder for Sarah and Louise, partners in Papuan puddings (cake and drinksssss). Will try to make the recipe in understandable English

 

Papua Christmas pudding (the cake)

- 150g of bread

- 100g of flour

- 2 eggs

- 100g of melted butter

- 75g of sugar

Mix all to obtain dough and add

- 150g of crunched ginger biscuits (speculoos)

- 30g of raisins

- 2 bananas

- 50g of nuts

- 1 zest of lime

- Rum… Start from 4 tablespoon and add as desired.

Put in a greasy basin (or a small bowl is enough) that can go into boiled water.

The pudding basin shall be put in a pan filled of water half-way till the top of the basin. Cover the pudding with a cloth.

When water is boiling, reduce the fire and let it cook 6h. Check every now and then to add water. Make sure no water enter the basin!

When ready, put in on a serving plate and it is time for the pudding to serve its purpose (be light on fire with rum what else?).

You can also decide to eat it.

It was actually the best Christmas pudding I add. We add no time to assess the conservation ability of the thing.

Papua Christmas pudding (the drink)

The Papua Christmas pudding is made from a very healthy drink used previously for fasting and cleansing days by Agathe until Thomas tasted it to declare ‘Hey this will be great with Rum!’. We are so completing each other…

 A handful of red chillies shall be put in a mug and covered with boiling water. Let it rest for 5h minimum.

Ground 5cm of fresh gingerroot and squeeze around 8 small lime.

Put everything (chillies water without the chillies, lime, ginger) in a jug and add 6spoon of honey (cane sugar better but we are in Papua still). That is the basis for the healthy drink and you can decide to have it in 1, 1/2 liter of clear water to drink through the day or…

You can add 2 can of soda water, the equivalent of one glass of grapefruit juice and rum. That is where I don’t remember how much rum we added: ahem… 15cl? More? Well it was very good and we encourage you to taste all along the rum adding process.
